Apple Chicken with Rice in 1 pan!!!

You can’t go wrong with this dish. Literally. You cut stuff up and let it all cook together in ONE PAN. Then you have fall deliciousness in a bowl.

I had this idea because as you just saw in the video, I said something in my last video for caramel apple pie cookies, that since you would have leftover diced apples, you might as well “throw it in chicken, or something!”. That led me to realize I should make a savory apple dish! People always think about adding apples to sweets, but it pairs SO nicely with chicken! And rosemary! Mmmm…

You may even have all of these ingredients so you won’t have to run to the grocery!

1/2 yellow onion, diced or chopped

1 apple, diced or chopped (I’ve made it with red apples and green apples, personally I liked it better with the granny smith.)

1 1/2 tsp coconut oil

1 pound of chicken (or 1 breast per person)

1 tsp salt and pepper

1 tsp fresh rosemary

1 cup rice

2 cups water

Lemon juice (optional)

First step, dice/chop the onion and apple on the same cutting board. Heat 1 teaspoon of coconut oil in a pan that you know you have a lid for. If you only have olive oil in your house, you can use that, but then watch the video to find out why you should buy coconut oil! Add the onions and sauté for 1 minute. Add the apples and a pinch of salt. Stir, leave on simmer and go cut the chicken.

Using the same cutting board as before, cut 1 pound of chicken, or 1 breast per person. The amount of chicken won’t affect the dish too much. If you’re carb conscious, use more chicken vs. rice.

Transfer your onion/apple mixture to a bowl. Maybe even a bowl that you will be eating out of later… always thinking about less clean up. 🙂

Heat 1/2 of a teaspoon of coconut oil to the pan and add the chicken. Add salt, pepper and rosemary. Stir and cook on medium heat for about 4 minutes until the chicken is just barely pink. It will finish cooking all the way later.

Add the onions and apples back in. Add 1 cup of rice and 2 cups of water. I only eat organic brown rice, but you can use whatever you’d like! However, I would strongly urge you to choose the healthy option 🙂

Stir and bring to a boil. Once boiling, turn the heat to medium low, cover and let cook until all of the water has been absorbed. If it’s gently boiling, that’s okay! Personally I get impatient, so I let it boil a little. If you use white rice, it will take 20 minutes, if you use brown, more like 30-35.

I LOVE adding lemon juice. Try it out plain first, then add the lemon!! The lemon/rosemary combo really brings out the apple. SO good. Seriously, like I said in the beginning, you can’t go wrong with this one! Everyone will love it.
